The Sweetest Vegan's Memorial Day vegan sweets: red, white, and blue fruit cups

Tasha from The Sweetest Vegan has a little patriotic dessert for your Memorial Day nomming — but unlike the usual holiday fare, it's vegan, raw, and gluten-free!


Red, White, and Blue Fruit Cups
Yields: 4 servings

Ingredients:
2 cans coconut milk, chilled
4 tablespoons powdered sugar
2 cups blue and red mixed berries

Directions:
Spoon the cream from the can of coconut milk into a large mixing bowl, leaving the liquid behind.

Beat coconut cream and powdered sugar until whipped and fluffy with an electric hand mixer.

Divide the mixed berries between 4 serving ramekins. Dollop the white fully whipped coconut cream atop the very berry bliss.

Serve to you patiently awaiting and lovingly sun kissed family.
