Learn how to make your own homemade rainbow cake

In some parts of the world, it’s summer barbecue season — and this little rainbow cake beauty would make any party shine. Rainbow cakes are nothing new, especially on Pinterest, but have you tried making your own for a summer event? April of April Knits, Cooks and Reads made her own layered rainbow wedding cake and posted a great tutorial on her blog including her cake recipe, how she colored the layers, and the assembly. She was able to make the layers about a week ahead of time and freeze them before assembling and icing the whole shebang.

Oh, and you know what would be awesome on top of the frosting? Colored sanding sugar!

  1. I made a rainbow cake in March for my other half’s birthday – Pretty much exactly the same, except that I used a UK recipe (Grams instead of Cups measurements) And used Americolor Gel (Which is Kosher and Suitable for Veggies apparently.)

    Only recommendation I have is that you make PLENTY of Frosting – I made a TON of Cream cheese frosting for mine, Realised that I didnt have enough and had to make another batch – It needs to be fairly thick on the outside, otherwise you can see the colours through the frosting.

    I also halved the recipe and made a UK cake (Red White and Blue) for the Queens Jubilee, and then a Spanish flag (Yellow, Red, Yellow) for a friends leaving party.

    I’m a little bit addicted to colouring my cakes now! LOL!
