We all can't claim this holiday necessarily, but we can do a little bit of celebrating in our own small way with a few Mexican-inspired noms. Let's get to the Cinco de Mayo recipes! Elote pizza I'm taking one of my favorite Mexican street foods, elote, and turning it into a delicious, charred, savory, elote pizza (charred corn pizza). After the cupcakes are cooled, squirt about 1/2 teaspoon of tequila into each (not too much or they'll be soggy!). For the frosting, I mix together powdered sugar and softened butter until it's the consistency I like, with about 2-4 tablespoons of lime juice and 2-4 tablespoons of tequila. Garnish with a lime slice and/or a pinch of coarse salt. 🙂 Or Google "margarita cupcakes" for more detailed recipes. They're so good!!! Comments are closed.
