Since we can’t all dine together like one big happy family, we can at least attempt to feed each other via these Homie-approved recipes.

The Stumptown Fizz: The perfect cocktail to celebrate the flavors of spring

As Portland melts into early summer, we’ve been looking for any excuse to celebrate the flavors of spring. The drink is fun to make, and substitutions are easy — if you can’t get Oregon-made spirits, check out your local distilleries and use some of their products instead!

Megan-simple four-ingredient parmesan-crusted chicken

This is my favorite lazy, parmesan crusted chicken recipe. It only has four ingredients, including the chicken, that perhaps already have in your kitchen right now! It’s baked but crispy, a little cheesy, and it’s virtually impossible to over-cook the chicken and make it dry. Are you ready?

Where, when, and how to hunt for morels

If you’ve never had the pleasure of eating a morel mushroom sautéed in butter, you need to go mushroom hunting. Like, now. Or at least the next time they’re in season.

Pesto avocado sandwich

A deliciously messy mean green pesto and avocado sandwich recipe

I had previously made a lighter version of pesto inspired by spinach and artichoke dip and I had to find a vehicle to drive it into my mouth. This was a a job for a bunch of green stuff for a big ol’ vegetarian sandwich in the making.

Slow cooker green chile pulled pork: it’s a gift for Future You!

So… This pork. It’s great in tacos, nachos, or burritos. It’s decadent over cheese grits. I’ve eaten it happily in a bowl of ramen. I suspect it would be great in tamales. Put it in your quesadilla! Put it in your breakfast burrito! Add some to your huevos rancheros! Put it on small roll with shredded cabbage and call it a slider! Enchiladas? Sure! Eaten cold from a bowl straight from the fridge because you can’t even be bothered? Absolutely! It’s dang versatile, and it freezes beautifully. Make a big batch and freeze some. Future You will appreciate your thoughtfulness.

Healthier-than-normal, no-bake, peanut butter banana cookie recipe

I love baking, especially when it’s sweets. But the only thing better than baking a fresh batch of cookies, is not baking, and still getting a delicious batch of cookies. This is a lightened-up version of my grandmother’s no-bake cookie recipe.

My simple, fragrant, red lentil and veggie Dal recipe

Indian-style Dal is a wonderful, thick, delicious soup that becomes a stew the longer it sits. The warming spices offer a welcome change from the traditional choice of chicken noodle, and the recipe is seriously, ridiculously, easily adaptable. As long as you have a few staple ingredients, you can make it with whatever you have lingering in your freezer or produce drawer and still manage to have something that tastes rich and delicious.

My mom’s awesome and super-easy cornbread recipe

If you ask my mom, there’s only one way to make cornbread and that’s in a cast iron skillet with THIS recipe. And while I find many cornbreads enjoyable (shh don’t tell mom), there really is something about this recipe that makes it my favorite.
