Yummy, easy, and practically dish-free Greek chicken recipe

My favorite thing about this dish, is, if I eyeball everything, use Ziploc bags and foil, it’s virtually dirty dish-free. It also pairs wonderfully with fresh veggies or salads.

Ingredients

  • 3-4 chicken breasts
  • 2 tbs oregano
  • 2 tbs lemon juice
  • 2 tbs olive oil
  • 1 cup plain yogurt
  • 2 cloves of garlic
  • 2 tsp parsley
  • 2 tsp salt
  • 2 tsp pepper

Instructions

  1. Throw all the ingredients into a bowl or Ziploc bag.
  2. Mix it up really well.
  3. Let the chicken sit in the mixture for a few hours in the fridge (covered if you used a bowl). I’ve let this sit anywhere from two hours to overnight.
  4. When you are ready to cook it, preheat your oven to 375F and place the coated chicken on a foil-lined baking sheet.
  5. Bake for 60 minutes.

  1. I am eating almost exactly this tonight! I do mine in the slow cooker though, then shred it over a baked sweet potato with cucumber yogurt sauce.

    • I would say that it should be fine without, but the yogurt would make it more moist, I think, or make it a bit creamy. The flavor would be a little different, but not in a bad way, by any means.
