A one-pot meal making my life! It’s an easy-peasy recipe will become your go-to brunch meal when you’re short on time. This sweet potato breakfast skillet combines everything I love: bacon, eggs, sweet potatoes, and any veggies you like. You can easily vegan-ize it if you like, too.

Chunky Monkey overnight oats
The base recipe for overnight oats is pretty simple and delicious as-is. But adding in a ton of whatever you have on-hand (in this case, nuts, bananas, and cocoa!), makes it over-the-top good. And you can make a ton ahead of time. Whoo.
