Today is Day 6 of Offbeat Home’s Cooking Challenge, wherein we see if Offbeat Bride’s Managing Editor Megan, a complete non-cook who lives off of cereal and frozen meals, can go an entire week preparing her own meals.
Each day, Megan will recount how yesterday’s cooking went, and we’ll share the next day’s recipes prepared by Cat Rocketship (who SWEARS you can afford better food!). Feel free to cook along with Megan, if you’d like!
Day 5 had thrills and chills. The thrills being making yummy food and encountering some strange stuff at dinner time. The chills being that I ate ice cream for lunch. (Get it, cause it’s cold? Oh man, I’m tired.)
Breakfast: Scrambled egg tacos
Hole lee guacamole. This was an AMAZING breakfast. I scrambled the avocado with the eggs and then topped it with the yogurt and chives and had myself a merry little breakfast. Yes, it was SO good that, I made the whole recipe, even though Cat stipulated that it was “2 servings,” and I ate them BOTH.
So come lunch time I STILL wasn’t hungry…

Lunch: Smoked turkey sandwich with paprika mayo ICE CREAM!
After lunch time, I still wasn’t hungry. Then around 4pm I was having some stirrings, but I didn’t have room enough to eat a turkey sandwich-style lunch. So I, in my infinite wisdom, remembered that I hadn’t taken Cat up on her offer of ice cream for dessert last night, it meant that I was OWED ice cream. And even more, that it was a perfectly acceptable lunch!

That, my friends, is the most delicious ice cream EVAR. Thankfully my friends Alex and Lisa (remember Alex from my harrowing shopping experience?) left it behind when they finished their visit and I get to eat all the benefits. Thanks guys!
Dinner: Chickpea spinach curry with cucumber-yogurt sauce and rice

I ate that dinner so freaking late at night that I haven’t even been hungry AT ALL for breakfast today. But I’m looking forward to lunch and dinner. Wanna make ’em with me?

LOL kudos to you! I never get the rice right. Usually now I just use rice noodles because for some unknown reason that works out better for me.
A friend left their rice cooker at my old apartment and received a new one at her bridal shower. Best forgotten item EVAR. As long as I rinse the rice and put in enough water, I cannot fail!

Yay success!! Way to go 🙂 Unless I’m making Minute Rice (which takes 10 minutes?) I tend to undercook rice. No biggie, as long as there are no hard uncooked grains in there I call it good, and husband has never complained about my ‘slightly firmer than al dente’ rice. Also, when you started opening that can, I started thinking, “Is that a..” and then you said, “Tou-can opener!” 🙂
ALSO, now when you post your videos, I try to see what utensils you’re using and if they look like animals. Your kitchen is a zoo!
HA! Not shown in that video: the monkey peeler (for the cucumber) and the whale ice cream scoop (for the ice cream).

Two words- Rice. Cooker. Its amazing, I never cook rice without it and it is perfect. Every. Single. Time. Mine even has a basket on top that steams veggies with the boiling rice water! Genius! I even toss seasonings into the water to flavor the rice while it cooks…voila! Instant meal… once glorious device.

I agree with rice cookers being amazing machines. I like that I can set it and leave the house to get groceries and not worry about setting the house on fire. I made the chickpea curry recipe a couple of days ago and OMG-good! Really easy as well 🙂

You may not always enjoy the cooking, Megan, but the videos are comedy gold. And I must say you are game for making foods you don’t even like (i.e. the french toast and eggs over easy ).
I’m so amazed that you’d never encountered ginger before! But then I have never eaten a taco, so we’re all learning 🙂
(we don’t have Mexican/Tex-Mex food here in the UK – Taco Bell tried to launch here but people thought ‘taco’ was too much like ‘tacky’ lol)
Ah. That explains why the British character on The Office didn’t know what a taco was last week. Do yourself a favor and try a taco soon! (Not from Taco Bell…obviously.)
I have no idea where I can even get a taco from haha, but I will try 🙂 We have fajitas in the UK which are pretty popular for people to make at home, but it wouldn’t get eaten at a restaurant. But then, Americans eating gyros in a restaurant is pretty hilarious to me because over here that’s drunk person food a la Taco Bell 😉
Curry is extremely British though, Chicken Tikka Massala was invented in Scotland!
I completely lolled at your want the water to boil meltdown! That, right there, is why I hate cooking and exactly what I look like in the kitchen if I attempt anything more than cheese on toast!

First of all: YOU HAVE A LEFT-HANDED CAN OPENER! I mean, yay, it’s a toucan, but it’s the left-handedness that really excited me 😀
It took me forever to learn how to get rice right. In college my mom made a friend from Japan who showed me how to make Japanese curry rice once, and after that I was totally determined to learn to cook rice. I’ve burned my fair share to the bottom of the pot, I’ll tell you that (and had it boil over and explode onto the stove, and undercook it…).
Also I did make that chickpea curry and it was delicious!
To all the ppl saying “get a rice cooker” — they’re not magic. I even burn rice in a rice cooker, to the shame of my Chinese mother. So yeah, rice is hard.
I’d agree that the cheap ones are not magic, but the Zojirushi we got as a wedding gift most certainly is. I throw in rice and water, and out comes deliciousness. It even plays a cheerful song when it’s done.
I also like to soak steel cut oats in it overnight, and program it to start cooking about 20 minutes before I’m supposed to get up. Warm, fresh oatmeal is my incentive to get out of bed. It works pretty well.

Kellbot, you can make steel cut oats in the crock pot as well! This is my go-to company breakfast. Steel cut oats, water and dried berries into the crock pot before bed. Set out bowls & spoons, some chopped walnuts, brown sugar and milk in a thermos, program the coffee maker to go off at an inhumane hour, and let guests fix their own damn breakfast when they’re ready! Everyone loves this stuff and asks for the recipe to take home!
