Avocado toast is the best! My personal favorite is to get a piece of ciabatta, drizzle with olive oil, and take it to work in a bag. At lunch, stick it in the communal toaster oven. While toasting, squish an avocado and sprinkle in a little salt. Pull the toast out and spread it on. Walking back to my desk, heads always poke out of the offices wondering what smells so good – and it only took a few minutes.
Alternative toaster oven work lunch recipe: toast a smidge of goat cheese on that ciabatta with the olive oil along with tomato slices. Amazing open-faced sandwich!

I used to work in an office building that had a grocery store on the ground level. I usually brought a prepared lunch from home, but on the days I forgot or didn’t have time – I went down to the store and bought an avocado and an asagio cheese bagel from the bakery section. Toasted the bagel in our break room, smooshed on the avocado, and voila! Best lunch in the office. I have to admit that I totally stole the idea from a genius coworker though.
A toaster oven invention of mine: whole grain bread, hummus, avocado slices, sprinkle of shredded cheese – toasted open faced sandwich. Yum.
I can vouch for the deliciousness of curry added to hummus, as I do that quite often, but now I’m curious to try it with coconut milk too!
