My favorite thing about this dish, is, if I eyeball everything, use Ziploc bags and foil, it’s virtually dirty dish-free. It also pairs wonderfully with fresh veggies or salads.
Ingredients
- 3-4 chicken breasts
- 2 tbs oregano
- 2 tbs lemon juice
- 2 tbs olive oil
- 1 cup plain yogurt
- 2 cloves of garlic
- 2 tsp parsley
- 2 tsp salt
- 2 tsp pepper
Instructions
- Throw all the ingredients into a bowl or Ziploc bag.
- Mix it up really well.
- Let the chicken sit in the mixture for a few hours in the fridge (covered if you used a bowl). I’ve let this sit anywhere from two hours to overnight.
- When you are ready to cook it, preheat your oven to 375F and place the coated chicken on a foil-lined baking sheet.
- Bake for 60 minutes.

I am eating almost exactly this tonight! I do mine in the slow cooker though, then shred it over a baked sweet potato with cucumber yogurt sauce.
Yum! Will it work without the yogurt?
I would say that it should be fine without, but the yogurt would make it more moist, I think, or make it a bit creamy. The flavor would be a little different, but not in a bad way, by any means.
Elizabeth is right, it will work without the yogurt. The yogurt helps keep it moist & adds to the greek flavor, but not creamy.
