This Dixie Kitchen-style Eggs Sardou is a variation of the Creole dish that I love at my local soul food joint, Dixie Kitchen. It takes the traditional eggs sardou and replaces artichoke hearts with fried (baked) green tomatoes as the base. Plus, spinach hollandaise is never wrong.

I thought I was the only one until I saw Guy Fieri (who I was watching as I really bored) one day on DDD say he hates eggs and my niece also. So I know there is at least two other people out there who hate eggs too. So I am glad there is more than three of us out there (so it was a big deal for me to say something with eggs looks good. Getting me to eat it is a different story).

I had no idea eggs sardou existed as a thing until now, but now that I know, I must figure out a way to go to New Orleans and HAVE SOME. Especially with artichokes. I love artichokes. And hollandaise sauce. Mmmm
