Simple Vitamix recipes for blending newbs

We got two Megan-simple cooking appliances from our wedding registry. I already talked about how much the Instant Pot rocks. But I have to say, I love our Vitamix (the one with the idiot proof soup, smoothie settings) EVEN MORE! It’s incredibly Megan-simple. I’ve made soups, smoothies, and acai bowls.

And one of our readers posted a question asking if I’d be posting my recipes on Offbeat Home. I’m pretty much just using the recipe book that came with the Vitamix, with a couple easy additions from the interwebs.

But I’ll totally show you my favorite Vitamix recipes if you show me yours!

Acai bowl

  • ¾ cup apple juice
  • 1½ cup of frozen blueberries
  • One of those frozen acai packets (I use Samabzon), broken into 4 pieces
  • 1 frozen banana (broken into 4 pieces)
  • 1 heaping cup of frozen chopped kale
  • ¼ teaspoon matcha green tea powder

Set the Vitamix to the smoothie setting. And use the tamper if you have to.
Top with granola and bananas and shaved coconut.

My favorite easy green smoothie

Black bean soup

  • 3 tablespoons of olive oil
  • ½ cup of chopped onions (I buy them pre-chopped at the store!)
  • 2 peeled garlic cloves
  • 2 teaspoons of chili powder (although I might increase this next time)
  • 3 cups chicken broth
  • 2 tablespoons of lime juice
  • 2 cans of black beans (rinsed and drained)

Sautee the onions and garlic in the olive oil until they’re soft.
Add the chili powder and cook for a little longer.
And the rest of the ingredients to the Vitamix, then add the onion and garlic mixture.
Set the Vitamix to the “soup” setting.
Enjoy topped with avocado!

    My absolute FAVORITE go-to green smoothie recipe is a little bit involved:
    1/2 Avocado
    3 Large Dates (Pitted and soaked in 1 cup of water in the fridge overnight. Use both the dates and the liquid in the smoothie.)
    1/2 c. Frozen Mango or Frozen Peaches (or both!)
    1/2 c. Plain yogurt or Kefir
    2 Cups of fresh spinach (you could sub for kale, but it makes it a little more earthy)
    1 tsp fresh ginger root
    1/2 tsp cardamom
    1/2 c. cold water (if smoothie is too thick)

  2. My favourite green smoothie, makes a big batch I keep in the fridge:
    Two frozen avocados
    225 g frozen mango
    Juice from 1 lime
    100 g fresh spinach
    7 dl green tea with lemon/ginger or infusion tea
    The tea defrosts the frozen fruit nicely if you’re in a hurry! Just blend it and enjoy a vitamin packed drink that I sometimes drink instead of dinner or bring to work for my night shifts.

  3. My easy peasy go-to smoothie formula is as follows:

    1 small/medium banana
    120g (about 4.5oz) frozen fruit
    30g (1.5oz) green leaves
    1 tbsp milled flaxseed
    1 tbsp chia seeds
    350ml liquid

    Makes around 600ml of smoothie – perfect for a filling on-the-go breakfast, and you can play around with different frozen fruits, or different plant milks without having to keep referring to a recipe. And it’s really easy to prep ahead too – everything but the banana and liquid can go in the jug/cup/bottle the night before, then in the morning all you need to do is throw in the banana & milk, blend, and you’re done.

  4. This is not necessarily Vitamix specific but for my food texture averse/sensory challenged child, this is a magic smoothie recipe to get greens and protein into him that is completely benign and just tastes like bananas IMO. Sometimes I make one for myself and drink on the way to work because it’s just plain easy and filling.

    + 1 banana
    + Large handful of baby spinach
    + 1 cup plain whole fat yogurt (type/brand does not matter)
    + 1 heaping tsp of nut butter (type does not matter but sweetened sunflower butter is the most neutral, and good for nut-free households obvs)
    + 2 tsp chia seeds
    + Plain coconut water to almost cover above plopped in ingredients
    + Optional: 1/8 ripe avocado

    Blend like there’s no tomorrow. Drink. Call it a Shrek Shake if you must, if there is questioning about the green nature of the smoothie. (This was on the advice of a friend who’s kids loved Shrek movies. Mine doesn’t so instead it goes in a stainless steel container with lid and straw so he doesn’t see the color.)
