Pangsit was always a bit of a mystery to me; my grandma has been cooking for so long that she eyeballs all of her recipes and the way she folds these deep fried delights was too quick for me to follow. In short, pangsit goreng is deep fried wonton (although we'll be using spring roll pastry, because oma said so), filled with a meat mixture. I live in Oregon, and we've officially moved into the COLD COLD SO COLD months. I LOOOVE eating muffins for breakfast! However, I am the first to admit that my mother was right when she warned me that muffins are really cookies in disguise. So, I have been on a quest to find healthy muffin recipes ever since. What I've found is that most muffin recipes only have one or two factors that make them "unhealthy," like too much sugar or too much butter. FORTUNATELY, there are easy fixes for most of these problems that allow me to make the muffins healthier, while still enjoying this tasty treat.
I hated being vegan for a long time, because I was missing out on bacon cheeseburgers. So I would waiver back and forth, until the day I figured I could just make anything and everything vegan. Bacon, cheese, hamburgers, all vegan-izeable. I was not a prisoner to my healthy conscious and did not have to live in it's dark deprived shadows.
The morning of New Year's Day, while we weren't feeling entirely seedy, we were craving something greasy and delicious. I didn't have enough eggs in the fridge to do a stock standard bacon and eggs breakfast, but I also needed to use the bacon pretty soon. Then the lightbulb came on: bacon pancakes.
I discovered cauliflower soup when I was looking for a healthier alternative to one of my go-to winter meals, potato soup. Cauliflower has fewer calories than potatoes, so using it as a substitute drops the total caloric content of your soup by three quarters. Calories aside, it also has fewer carbohydrates than potatoes, so the soup doesn't leave you feeling bloated and ready for a nap afterwards. Plus, it's good for people who can't have dairy because you don't need milk. Vegans can swap out the butter and stock for their preferred substitute.
