Happy Cinco de Mayo! In case you thought it was just an excuse to get your margarita game on, it’s actually the commemoration of the Mexican army’s victory over the French at the Battle of Puebla in 1862 (more info here!). We all can’t claim this holiday necessarily, but we can do a little bit of celebrating in our own small way with a few Mexican-inspired noms. Let’s get to the Cinco de Mayo recipes!

Elote pizza

I’m taking one of my favorite Mexican street foods, elote, and turning it into a delicious, charred, savory, elote pizza (charred corn pizza). Technically, this should be esquites pizza, which means off the cob, but I’m splitting hairs there, I think. Either way, it’s just being inspired by either yummy snack.

  1. Margarita cupcakes! Make plain ol’ white cupcakes but with the zest and juice of three limes added in. After the cupcakes are cooled, squirt about 1/2 teaspoon of tequila into each (not too much or they’ll be soggy!). For the frosting, I mix together powdered sugar and softened butter until it’s the consistency I like, with about 2-4 tablespoons of lime juice and 2-4 tablespoons of tequila. Garnish with a lime slice and/or a pinch of coarse salt. 🙂
