Use your crockpot to make chicken tacos

My name is Mich and I’m addicted to my crockpot. *polite clapping*

Here’s my favourite, cheap and easy crockpot recipe: chicken tacos. This recipe makes eight meals for me and my husband — that’s 16 portions for about $14 (I buy chicken when it’s on sale and freeze it).

Ingredients

  • 2 frozen chicken breasts
  • 2 cans kidney beans
  • 2 cans pinto beans
  • 2 cans corn
  • 1 large can crushed tomatoes
  • 1 can diced tomatoes w/ chili
  • 1 packet ranch seasoning mix
  • 1 packet taco seasoning mix

Step 1: Drain and rinse beans and corn.

Step 2: Dump everything into the crockpot and stir.

Step 3: Turn crockpot on low for eight hours.

Step 4: Remove chicken breasts and shred, then mix back in.

Step 5: EAT. And then freeze the rest for left overs!

We like to eat the Chicken Taco mix stuffed into hard Taco shells with shredded cheese and dollops of sour cream, but you could eat it anyway you like.

  1. Yes! I love finding new easy crock pot recipes, thank you so much for posting this!!! My brother-in-law told me to throw chicken breast in with some Italian dressing for 8 hours on low, one of the easiest recipes ever. Looking forward to seeing other recipes in the comments 🙂 thanks again!!

  2. I love my crockpot! I’ve done a recipe similar to this, but with just corn and salsa (not a fan of beans in general)

    I found an awesome blog a while ago, crockpot365.blogspot.com, where the chick used her crockpot every day for a year, never repeated a recipe, and blogged about it, with all the recipes posted. I’m not affiliated with her at all, I just thought it was a great resource, since she includes a “verdict” section at the end of each one saying how it turned out. It’s all gluten free too, which isn’t a concern for my family, but is for alot of people.

    Anyways, crockpots are awesome, I’m planning on using mine tonight to make pulled pork sandwiches, and tomorrow for a turkey chili with coconut milk…I use it probably 4 nights a week!

  3. Someone already mentioned my favorite crockpot recipe (italian dressing FTW) so here’s another –

    Put a beef roast into your crockpot. Cover with one can of cranberry sauce (if it’s the jelly kind, try to cut up the can-shaped jelly into multiple globs as it comes out of the can). Set on low, go to work. Come home, turn beef over to make sure the top gets flavor too, come back in a few minutes and eat. I usually microwave frozen vegetables to put on the side. Bonus: Wrap two sweet potatoes in foil – I usually wrap them separately and set one on each side of the beef. They’ll be cooked through at the end of the day.

    xposting with someone who mentioned crockpot365 – that lady is indeed awesome, but some of her recipes are hit or miss. Probably depends on your tastebuds though.

    You know THE BEST way to shred chicken? Put it into your KitchenAid with the mixing beater, turn KitchenAid on. Tots awesome.

      • I just set the chicken (or whatever) aside until it cools a bit, and shred it with my fingers.
        Then again, I’m a bit low tech – I slow cook things in cast iron in my oven. If I could use fire instead of electric I probably would. 😉

        This recipe sounds good. Add mushrooms and onions, and sub. black beans, and (with rice, of course) it’s nearly my arozz con pollo (sp?) recipe.

  5. Yummy! I have my crockpot on at home right now! It’s one of my husbands favs: pot roast

    Chuck roast (I think mine’s like 3lbs)
    1 can diced tomatoes
    bunch of little potatoes
    couple handfuls baby carrots (to avoid having to cut anything)
    chopped up onion
    1 packet onion soup mix
    1 cup water
    1/2 cup red wine

    cook on low 8-10 hours

    yummy!

  6. We do something similar for chicken tacos
    – skinless, boneless chicken breasts (or any white meat)
    – jar of salsa

    – dump both in the crockpot, cook on low for 4-6 hours…. add cheese, sour cream, lettuce, whatever to soft tacos shells and enjoy (its also good over rice as well)

    I have a little 2 quart crock pot and since I’m generally just cooking for me that works out. But many times there are awesome recipes to be found for larger crock pots like this one and I feel left out. 🙁 <– sad Amber

    I do have one similar-ish good one though!

    Spicy Southwestern Chicken Stew (no clue what else to call it)
    …for a 2 quart crockpot or larger

    2 frozen boneless chicken breasts
    1 can of corn, drained
    1 can of black beans, drained
    1 packet taco seasoning
    16 ounzes of medium picate sauce (I prefer Pace and picate, but I'm sure it would be just as tasty with salsa or any other temp picate/salsa)
    Sour cream or plain non-fat yogurt
    Shredded cheese of your choice – recommend cheddar/colby mix or equivalent

    Put everything BUT the chicken, sour cream, and cheese into the crock pot
    Mix well
    Put the chicken breasts into the mixture
    Cook for 4 to 5 hours on high
    Turn temp to low, cook for 2 to 3 hours on low
    Stir occasionally
    Shred the chicken breasts in the crock pot with a spoon/fork.
    Serve immediately into bowls, top with dollop of sour cream and sprinkle of shredded cheese.
    Mix well.
    Nom.

    Serves 4.
    Freezes well but do not add sour cream or cheese until right before serving.
    Also good if you add some tortilla chips on top… although I'm trying to figure out how to thicken it without changing the flavor as I think it be an awesome dip. I'm a cooking novice!

  8. I wish I used mine more. I work all the time and I like to eat healthy homemade food as much as possible so this would really help me save precious time currently being spent in the kitchen. I just never get around to researching recipes and I’m not confident inventing them for the crockpot yet as I’ve only used it a few times.

    Any veggie slow cooker fans have some favorite recipes to share? (vegan here)
