The Sweetest Vegan’s Memorial Day vegan sweets: red, white, and blue fruit cups

Tasha from The Sweetest Vegan has a little patriotic dessert for your Memorial Day nomming — but unlike the usual holiday fare, it’s vegan, raw, and gluten-free!


Red, White, and Blue Fruit Cups
Yields: 4 servings

Ingredients:
2 cans coconut milk, chilled
4 tablespoons powdered sugar
2 cups blue and red mixed berries

Directions:
Spoon the cream from the can of coconut milk into a large mixing bowl, leaving the liquid behind.

Beat coconut cream and powdered sugar until whipped and fluffy with an electric hand mixer.

Divide the mixed berries between 4 serving ramekins. Dollop the white fully whipped coconut cream atop the very berry bliss.

Serve to you patiently awaiting and lovingly sun kissed family.

  1. I made the coconut whipped cream last week and I have to admit it is really good. I dislike coconut but it is such a light flavor in this. Although mine didn’t get so fluffy.

  2. Yummy! Also, the fact that this is vegan means it’s lactose free, which is great for those of us who are or love people who are lactose intolerant. (this may be an obvious statement, but it’s only recently that I had the lightbulb moment of vegan=lactose free)
    How much water is left after you scoop out the coconut cream from the cans? Can it be used for something else? Can you just drink it?

    • I think it may vary a bit from brand to brand depending on how much fat they leave in. but the cheap brand I bought I’d say is was a teensy bit more than half of the can. I didn’t use anything with the watery part myself as I forgot about it, but I’m sure you could use it to add in hints of coconut into foods. I was going to do something with chicken (I wanted thai food that night)
